Back in the 50?s and 60?s tofu wasn?t in the vegetarian mainstream, or if it was, we didn?t know about it.? I think the first time?I tried it was in 1972.??A granola type fellow that had moved to our area turned us on to the whole soybean idea.?
I didn?t like it.? It tasted like water to me and why on earth should I drink water when I can drink koolaid?
Well, grandma was intrigued by this food source that was supposed to provide so much protein and fiber.? she went right to work concocting recipes with this white meaty looking stuff.?
??????????????????????????????????????????????????????????? ?? Most were terrible.?
Grandma was trying to use the tofu as an ingredient that would provide flavor but in reality the tofu would take on whatever flavor you were adding to it.? This in turn diluted whatever seasonings you put in the dish.? Hence, a very bland meal.?
One day when she was making egg salad sandwiches she look at me and said:? What if I used the tofu for the eggs??? This ended up as one of the few tofu recipes I would eat back then.?
Now of course, soy is shoved?down our throats by lobbyists.? The data on this wonder food is that it should no longer ?be relied upon as a food source.? I just say:? stay informed and make your own decisions.?
????????????????????????????????????????????????????????? ?Egg? Salad Sandwiches
1 package of firm tofu drained??????????????????????????????????????? 1 red bell pepper finely chopped
1 carrot grated????????????????????????????????????????????????????????????? 3 green onions finely chopped
2 tbls pickle chopped????????????????????????????????????????????????????1/4 tsp salt or more to taste
4 tbls?mayonaise????????????????????????????????????????????????????????? 1 tsp mustard
dash of pepper????????????????????????????????????????????????????????????? shredded lettuce
In bowl combine all ingredients except lettuce.? Adjust seasonings to your own taste.
Let mixture sit for at least one hour so flavor can absorb into tofu.
Spread mixture onto a nice dense grain bread.? Top with lettuce. and remaining bread slice.
